We were integral to the growth of the Artisan Bread sector, focusing on encouraging the use of thermal oil ovens for a brick-oven-like bake but with flexible, space-saving, energy-efficient technology, helping such clients as La Brea Bakery and Tribeca Oven expand production while maintaining and even improving product quality. We introduced mixing technologies from Sancassiano that can better develop doughs with high hydration and reduce friction and energy consumption, and make-up lines from Minipan that completely eliminate extrusion. We introduced, over 30 years ago, the first multi-piston depositors from Comas for muffin batters with heavy inclusions, now fully C.I.P.

    Allied Bakery Equipment is proud to welcome Brad Winnaman to the Allied team, Brad was formerly Director of Fresh Operations for La Brea Bakery and most recently served as Master Baker for Revent USA.  In joining Allied, Brad adds further depth and dimension to the service Allied can offer its clients, bringing with him his 30 years of experience and skill, both with production and as one of the finest and most experienced bakers in the US,  Brad will help our customers with product development, selection of the right equipment to solve their production problems, and getting the most out of that equipment.
