  • Because the QUICK MELTER is a super-fast machine, we cannot show exactly HOW FAST this is done at the fair. So we just put a large block of cocoa butter, 8 blocks of milk chocolate blocks 11 lbs each, and a large block of cocoa mass on display on top/top of the Prefamac machine. Inspiring right?

    The QUICK MELTER  QM 40 is used for melting and maintaining the temperature of large quantities of chocolate (blocks or drops), butter or jam. The blocks are placed on a melting grid that is constantly heated. The QUICK MELTER QM 40 is double-walled and equipped with insulating stainless steel doors.

    The Prefamac melting grid can constantly maintain a high melting temperature and, thanks to 3 water circuits, there is a large contact surface with the chocolate, resulting in very short melting times.

    MINIMUM ENERGY CONSUMPTION

    The QUICKMELTER QM40 is equipped with a central control panel with separate temperature for 3 grids and 1 chocolate tank. This means that, for example, you can stop the heating of the 3 grids at night, if only the central storage container needs to be kept warm. Or that only 1 or 2 grids are activated if temporarily less melting is required.

  • MELTING AND MIXING: YOU ASK, WE BUILD THE KETTLES

    At Prefamac Chocolate Machines we can tell you everything about melting and mixing kettles. Our team prefers to produce completely customer-specific kettles as shown in the photo below. All-in with stainless steel platform, lobes pump or gear pump, double-walled piping and additional heating. Special level detections depending on the application or ‘consumer’ of the chocolate, weight control based on 1.10 lb.(0.5 kg) accuracy… and all this followed by a signal tower in which each color indicates a specific phase. This saves considerable time and increases the efficiency and comfort of your staff.

    You might also want a complete programming of successive melting kettles, in which various ingredients are added before the liquid mass is sent to an enrobing machine or a decorating machine? We can build this with the desired PLC or manual controls. Extensions in the future are also possible if you wish to add a melting kettle, another color of chocolate or glazing in a later phase. Prefamac grows with you and supports you in every phase of your expansion plans.

    Not only customization but also our standard melting kettles of 45, 63, 132, 264, 396 and 528 gallons (170, 240, 500, 1000, 1500 and 2000 liters) are very popular and always available within very reasonable delivery times. On machine stoppers, on a stainless steel platform (with or without a pump) and possibly with a simple “pump station” such as the leftmost kettle in the photo. The fact that our solid melting kettles still look like new after 25 years is particularly appreciated by our customers worldwide. Indeed … our kettles are certainly in 75 of our 103 export countries.

    Last year we developed the ROLL’X melting kettles at the request of several customers in order to be able to clean and change products very quickly. The solid and heavy agitator can be removed from the kettle very ergonomically and safely via a crane. Another important time saver if your product requires more frequent maintenance. And the small ergonomic ERGO 100 melting kettle, 26 gallons, is also a newcomer. With a simple electrical cabinet at the bottom and via a tap both sideways and at the bottom, you can easily innovate with gluten-free, vegan, keto… and all possible perfumes and flavors. Super handy, both for labs and in production.

     

    Individual or combined kettles can also be equipped with an external double-walled and heated filter. As a result, the chocolate can be used longer, your staff is relieved and in the event of a lot of failure the filter can also be installed in bypass. Think of your combination, and we implement it.

     

    Filling platforms at height can be developed for filling the kettles with small or large chocolate drops, or we can offer you very handy giraffe belts. The bags with drops can be ergonomically inserted into a collecting bin at a height of 3.3 feet (1 m) and the kettles are then filled at a self-determined speed. Very fast at the end of the day, or very slow so that chocolate is constantly being melted.
    And if you do start with blocks of chocolate of 11 or 88 lbs (5 or 40 kg)… it might be better to opt for our Prefamac Quick Melters. The insertion height of our Quick Melters is also only 3.3 feet (1 m), so ergonomically also a great advantage. By the way, the QM40 melts 1.100 lbs (500 kg) of real chocolate per hour (compound chocolate: even more). And thanks to the 3 thermostats on the 3 heated grilles, various products can also be combined. The stirrer at the bottom and the 4th heating of the machine make the whole an ‘immediately ready for use’ combination.

    BEAN-TO-BAR CHOCOLATE

    When we speak of cocoa nibs, these are small pieces of fermented, and carefully selected cocoa beans, which remain after roasting and peeling. We also speak of Raw Cacao, because these nibs can also be eaten without question. In Michelin-starred restaurants, the nibs are also regularly used as a garnish.

    The new PrefaNIBS machine from Prefamac processes these cocoa nibs into wonderfully radiant top-quality chocolate.
    Last month we presented the Prefanibs30 to the visitors at the ProSweets fair in Cologne Europe.
    Our customers mainly focused on the important advantages that this machine combines:

    • Pre-refining of the cacao-nibs
    • The refining process that processes the mass into liquid chocolate of less than 22 microns
    • And finally the conching process, the secret of top quality products, also in the same machine

     

    Micron is the measure of the smallest particles or particles present in the chocolate. Less than 22 microns means that the chocolate no longer has any powder taste at all. Any kind of powder is gone. And the use of your raw material -nibs- is 100%, so there will not be any waste.

    In summary, we can describe the Prefanibs from Prefamac as follows:

    • very strong machine to grind the heavy cocoa nibs and liquefy them during the process. Very liquid and shiny in fact, as is clear from the photos above.
    • minimum of screws and open spaces in the design, which means that the machine can also offer maximum hygiene and safety for the user, the end product and the machine itself

  • A few years before corporate social responsibility (CSR) became an active working point for many companies all over the world, Prefamac Chocolate Machines was already working on this quite intensively. At the end of 2019, Prefamac Chocolate Machines was one of the first companies in Belgium to receive the status of ‘Pioneer in CSR’ according to the UNITAR program. This 3-year trajectory was concluded with the maximum of the points. “We focus on corporate social responsibility primarily for our customers”.

    “We are all proud of the efforts made. Allow us to give a brief overview, starting with our ergonomic machines, then the efforts for the environment and of course also for our own staff.”

    • Supporting and respecting entrepreneurs and their employees

    “In a previous blog (Our machines also spare your employees) we already discussed the new ergonomic machines that Prefamac recently developed.” Ergonomic machines make it easier for customers to use their creativity for new products with a smaller footprint, for healthier products and with less highly skilled workers… In addition, they ensure that the customers of Prefamac Chocolate Machines can in turn guarantee a contribution to CSR towards their own customers.

    The small ergonomic 100L melting kettle, ERGO 100 is a very nice example of this including the following features :  

     

    • Very convenient for the staff to insert the products to be melted – drops in bags or heavy blocks – into the melting kettle at a height of only 3.3 ft or 1 meter.
    • A very strong agitator and a super secured machine, reducing the chance of anything going wrong to a minimum.
    • A simple tap on the side and a drain tap at the bottom make it easier to work with the melting kettle and to clean it in any situation.
    • The content of 22 gallon or 100L does not have to be completely filled. This makes it possible to experiment on a small scale with gluten-free, vegan, sugar-reduced, nut-free, high-protein products… and thus contribute to both healthier nutrition and a smaller footprint.
    • The small volume leaves room for a lot of creativity without requiring immediate high investments.

    • Respecting the environment

    Prefamac Chocolate Machines also made a great effort for the environment, aiming to do business as responsibly as possible. The actual starting signal to go all out for CSR came in 2017, with the start of a completely new and people-friendly company building. To this end, a number of points of attention were taken into account during the construction of the new building and the landscaping of the garden:

     The roof of the building was fitted with solar panels, so that we can provide our own energy.

    • The various offices have their own home automation for heating in winter and/or cooling in summer, and this is even linked to the alarm system to rule out errors completely. The perceived temperature will only increase when entering an office.
    • The lighting functions completely autonomously, so that the light is never left on unnecessarily. When people enter, the lights turn on automatically, and when they leave, they go out after a few minutes.
    • There is a collection and storage pond for the entire amount of rainwater that ends up on the new building, but also for 50% of the rainwater on the buildings that already existed. This collected rainwater is reused.
    • The landscaping of the garden was done with green-bearing and water-absorbing plants. Hardening is kept to a minimum. “We even have an insect hotel to create space for insects in an industrial area.”
    • Garden maintenance is done by an organization that works with disabled people.
    • And we even ‘pampering’ our staff

    In order to make the working atmosphere as pleasant as possible and to guarantee the well-being of our staff, we do/did the following:

     

     

    • In the offices, there are large windows on both sides, with a lot of light and with sun blinds to not hinder computer work.
    • Each office is equipped with inspiring modern art, to boost our creativity and to make every room acoustically comfortable. If several workplaces are housed in once office, they are separated from each other with grass-green walls.
    • Each desk can be set to a high/low position, so that sitting and standing work or a meeting can be alternated in a few seconds. This work flexibility is especially important for engineers and other administrative staff.
    • A brainstorming room including a darts board can be used freely.
    • An outside terrace with a large table and benches ensure that the staff can also sit outside undisturbed. In Belgium, nice BBQ weather is rather exceptional. “We should enjoy those beautiful days to the fullest.”
    • A culture of continuous learning, improving, in-house training to get the most out of your time … is central to all of our employees.
    • Prefamac Chocolate Machines is also strongly committed to internships for both domestic and foreign students, internships where young people can work with Prefamac machines, award ceremonies for professional chocolatiers, ….
    • Because the founder of Prefamac Chocolate Machines is a lady herself, no distinction was ever made between men and women. The ratio m/f has always been 50/50 – except in production.

    With more than 30 years of experience, Prefamac Chocolate Machines can guarantee you the right cooling: the number of cooling zones and the capacity of each, the ideal energy-saving insulation, an air or water-cooled system, convection cooling or radiation cooling, … And also the possible options that determine the ease of use and ease of maintenance.

    Do you have tailor-made requirements for a specific working height, with inclined and descending cooling units, a non-standard location for the drive, or a very long cooling tunnel at a top speed? We are happy to help you with our experience in co-design and co-creation.

    We have something for everyone in terms of dimensions: belth width 15.75", 19.69", 24.41", 32.28", 35.43", 41.34", 47.24", 51.18", 55.12", 59.06" and 62.99"(400-500-620-820-900-1050-1200-1300-1400-1500 and 1600 mm). There are practically no restrictions on length, because the speed of your output determines the length of your cooling. For our largest customers, 230 and 260 ft length (70 and 80 m) are no exception.

    The POWER cooling tunnel, as the name suggests, is the powerful tunnel that is deployed 24/7. The entire middle frame consists of stainless steel and insulated tunnel beds, so that energy savings are optimal.

    The POWER PLUS is identical in design, but for confectionery with a lot of crumb waste, hinged doors will pleasantly support the cleaning crew.

    The POWER SLIM is even easier to maintain than the other Power family members. Both the top belt and the return belt are directly accessible under the covers.

    The new AMBI AIR cooling tunnels are used earlier in the production phase, immediately after the oven. If your cakes, waffles or donuts need to be cooled quickly from 265°F / 130°C or even more. For most end products this is called a pre-cooling. Outside air is used as the cooling medium, and not gas or glycol cooled systems. The cooling is therefore very budget-friendly here.

    In the various types of Prefamac cooling tunnels, the humidity can also be strictly monitored, and the air velocity per evaporator can be regulated. The possibilities are therefore endless, and flexible to future production plans.

    After 20 years of intensive use, our Prefamac cooling tunnels still require a minimum of maintenance, due to their extremely strong construction and quality parts used. This is really the best advertisement, because our existing customers return as they continue to grow. The Prefamac cooling tunnels can of course also be used for non-food products, so the questions are very diverse.

  • Biscuits, donuts, waffles, nut mix bars, nougat, marzipan, .... are all super delicious, but with a layer of chocolate or glazing they are complete. At Prefamac Chocolate Machines we can help you with this with our enrobers, and even with the complete production lines up to 1600 mm or 63” width.

    The Prefamac enrobing machine is not incorrectly called SWITCH ULTRA. The large chocolate trays at the bottom of the machine can be completely removed from the base machine. You can purchase multiple trays for multiple colors, so changing or SWITCHing is really easy.

    But not only the large chocolate storage tray can be removed from the machine, the smaller bottom bath "for the feet" of your products can also be removed from the basic machine. Separately from the big chocolate tray, and the motor does not even have to be taken out of the machine. The motor that determines the amount of chocolate on the underside of the products simply remains in the machine to make the operator's job easier. And an optional transport rack is available for transport to the kitchen. Due to the combination of both advantages, we really call the machine SWITCH ULTRA. Ergonomic, super handy, super clean!

    And a double machine with two bottom baths placed one behind the other is also possible. The double curtain tray, the vibrating function, the blower, ... are of course also duplicated. Especially for delicacies that require a lot of chocolate.

    A standard Prefamac enrober has a length of about 2 m or 6.5 feet. But not all customers have this space in their current production line, if it suddenly turns out that the old enrober needs to be replaced. Prefamac then works out a complete tailor-made enrobing machine. Above you can see 2 enrobers that are fully mirrored. One for the left production line and one for the right production line. The control buttons should, of course, all be in the center where the operator moves. The bottom baths here have the normal standard sizes, but the chocolate stock containers are much smaller. A really nice piece of puzzle work! Also at the top of the custom-made enrober, where about as many electrical components have to be placed, as with a standard machine.

    An option that can be important is, for example, a tilt cylinder for confectionery that is only covered on one side. Either the wafers can rotate as in this example between grille part 1 and part 2 inside the machine, or behind the enrobing machine. The tilting cylinder will rotate at a higher speed, and in this way the products end up perfectly on the cooling tunnel.

    Another recommended option is a filter. On the suction side of the chocolate pump, to be able to use the chocolate for as long as possible or without replacement. Or a double filter in bypass: one in operation and one that is being exchanged. For extreme cases, the filters can even be used in series one after the other. One product is not the same, but we look for the right solution for every customer.

    We also have a great deal of variation for artisanal applications, both in terms of the customer's chocolate knowledge level and energy consumption, in order to make the right choices together.

  • Prefamac Chocolate Machines from small Belgium is renowned for its export results.

    The chocolate machines and cooling tunnels produced by the company mainly reach the large industrial manufacturers of biscuits, waffles, donuts, truffles and pralines, but also the much smaller artisan companies. Think of the chocolatier we know from famous romantic films, like the baker on the street corner who sells his Easter eggs and Christmas pastries in large quantities and various shades.

    Right from the start, exactly 34 years ago, not only the Belgian market was reached, but also the neighboring countries and the other countries of Europe. There was no internet and email traffic then! The quality of Prefamac's machines was top-notch, and the best advertising became a matter of course through foreign trade fairs and economic missions. They worked closely with chocolate manufacturers such as Belcolade (Puratos) and Barry-Callebaut, and were also highly regarded through their top chocolatiers and distributors.     The service drive at Prefamac is also a key to this export success. Not that they work 24/7, but emails are also followed up well in the evenings and on weekends. If you work with clients in more than 100 countries, this is a must, and also a nice spread of the amount of work.

    Their PLCs, but also all documentation, even instructions for changing certain parts, is available in 5 languages. A great asset that can only be found in Belgian companies. Belgium is so small that exporting companies are obliged to recruit only 4 or 5 language staff.

    In 1998 Prefamac received the Hermes Award, named after the combative warrior. Its managing director, Myriam Schepers, became the first female entrepreneur of the year in 1999.     Chocolate, cookies, donuts, waffles, etc. are cooled in cooling tunnels. There are several types of tunnel, with an increasing number of cooling zones according to the end product. Cooling medium Freon or Glycol. Always tailor-made machines....

  • In POWER III cooling tunnels, all kinds of cookies and chocolates are guided through a number of cooling zones via a conveyor belt, and are thus cooled. All tunnels are custom made.   • After cocoa beans have been fermented, dried and roasted, they are ground into cocoa nibs. Prefamac starts with its PREFANIBS machine from these cocoa nibs to the end product 'chocolate'. The Prefanibs 30-35, or the grinder/melangeur/concheur with a content of 30 to 35 kg or 66-77 lbs, grinds the cocoa into high quality liquid chocolate. Particles of maximum 22 microns are the result of this topper. The sieving of the chocolate before consumption, with minimal remnants, are the best proof for this quality machine.

    Due to the good ventilation of the machine, which allow all sour perfumes to escape, and a perfect combination of heating and speed, a separate conching machine is no longer required. The PREFANIBS is combining pre-refining, refining and conching in one single machine.

    TABLE MODEL

    Both the COMPACT and the COMPACT 3in1 are handy table models resting on plastic feet. A compact can therefore be placed on any flat surface. Prefamac also offers a stainless steel removable table, but even without this table, the machine stands out because of its simplicity and ease of use.

  • An enrobing belt is placed on a moulding machine (or tempering machine - see the other category) to enrobe cookies, truffles or pralines with chocolate (just the bottom or the entire product). Various bandwidths are available : 11" for the moulding machine with a content of 180 lbs and 7" for the moulding machine with a content of 66 lbs.

    A big advantage these days is the low energy consumption of the manual moulding machines: energy savings because work is done without a cooling condenser + a reduced air conditioning requirement since the moulding machine itself does not give off any heat.

  • MOULD SCRAPERS - TYPE ADAPT
    A pneumatic scraper is placed on a moulding machine or tempering machine. A container of chocolate moulds is replenished, and one by one the moulds are filled with chocolate and then vibrated....

  • The Prefamac MOULD SCRAPER ADAPT is suitable for the production of tablets, napolitains, but also for closing moulds. It must be combined with a manual Prefamac moulding machine or automatic Prefamac tempering machine. It's not the same as an automatic moulding production line or moulding plant, but of course also much cheaper and less complicated.

    The pneumatic scraper ADAPT has been developed to fill chocolate moulds for tablets or pralines and to scrape off the excess chocolate; or to produce only the outer chocolate layer of the praline or tablet. Immediately after scraping, the moulds are automatically vibrated. Special about the ADAPT is that this device is suitable for different types of moulds and can always be adjusted. The ADAPT can be installed on a Prefamac 65 or 175 lbs MOULDING MACHINE or on the CONTINUA 65 or 132 lbs tempering machines.

    TWO SCRAPERS AND A HEATED FRAME

    The heated mould guides and scrapers installed one behind the other guarantee an even finish of all moulds. The plastic scraper placed in the front also helps.

    ALL TYPES OF MOULDS CAN BE USED

    The Prefamac ADAPT is not only suitable for moulds of type 1000 (275 x 135 mm). Type 2000 (275 x 175 mm) or type 3000 (275 x 205 mm) can also be used. You can switch from one type to another in no time.

    ERGONOMICS AS AN ASSET 

    All controls are optimally accessible. The mould drawer can be easily adjusted, and the height for loading is also relatively low.
