The difference between a traditionally made pasta like ours and an industrially made pasta is easy to detect. The pale color and porous surface of our pasta is different because we press the shapes through traditional bronze dies, this lends a coarse surface that sauce clings to. We use low temperature drying to preserve the flavor of our freshly ground grains.
