Emerging Contaminants in Oils/Fats: Challenges in Analysis, Mitigation and Risk Assessment

Producers as well as consumers of edible oils and fats recently have to deal with emerging lipophilic contaminants such as fatty acid esters of 3-MCPD & glycidol (3-MCPDE & (GE), plasticisers or mineral oils. These compounds raised increasing attention in the last years due to possible adverse health effects they might cause if uptaken by food consumption. Despite the chemicophysical differences between 3-MCPDE/GE, plasticisers and mineral oils and their varying sources they have in common that they do occur not as single analytes but as three complex groups of compounds. These groups consist of many closely related and thereby difficult to differentiate individual substances. Consequently, evaluation of possibly related adverse health effects, risk assessment, analysis, mitigation and finally also regulation seems to be more challenging in comparison to dealing with classic contaminants such as pesticides, mycotoxins or heavy metals. This presentation is intended to give an overview on possible sources of these new contaminants, which oils and facts are affected mostly and which mitigation strategies might serve in general. Major attention is placed to highlight solutions and gaps in analytical determination of 3-MCPD-E/GE, phthalates and mineral oil which is differentiated into Mineral Oil Saturated Hydrocarbons (MOSH) and Mineral Oil Aromatic Hydrocarbons (MOAH). Finally, current and possible future regulations of the European Commission and other authority´s activities are highlighted briefly.
