Our Distilleries
The Ethical Spirits' distillery is a place where light is shed on underutilized materials from every angle to bring out their "Hidden gem".
Specializing in ethical production and consumption, it transforms ‘costs’ of supposed waste materials like sake kasu into ‘value’, creating a new cycle of regeneration.
The "Tokyo Riverside Distillery," established in 2021 as the third urban distillery in Tokyo.
In the building where the scent of juniper berries rises, there is an official store on the first floor and a Bar & Dining “Stage” where you can enjoy gin with food on the second floor.
It has become a hub of circulation where we, the makers, deliver directly to our consumers.
Planned to be constructed in Tsukuba, Ibaraki prefecture as the second distillery of The Ethical Spirits. Repurposing the gymnasium of the abandoned Sakuaoka Elementary School. In addition to distilling gin, we also plan to manufacture the "WoodSpirits", which will be the world's first* to commercialize and sell "wooden sake" by a private business operator.

*World's first: It will be world’s first to commercialize products utilizing a technology developed by the Forestry and Forest Products Research Institute to enzymatically saccharify and ferment fibers in wood.
