AWAMORI has been distilled in Okinawa since the 15th century. Only long-grain rice and black koji (a typical fungus from the region), are used in its production. AWAMORI matures in decanters and thus develops its characteristic of fine spiced aroma, which is described as umami. The Okinawa Distillers Association, to which 47 distilleries are affiliated today, sees itself as a worldwide ambassador of the Okinawa national drink AWAMORI, protects and preserves its traditional production and guarantees the high quality of the spirit.
